A diversion... something's cooking!

I dont usually call myself an accomplished cook and am always looking for simple recipes that will yeild tasty dishes in a not so long time. Here's one for you all to try out... Its super simple and quick and tastes divine!

Its a traditional Indian Nawabi Biryani

Ingredients

Oil - 150 ml
Meat (Chicken / Lamb) - 500 g
Rice (preferably Basmati Rice)- 300 g (washed & soaked for 30 mins)
2 Onions (finely chopped)
1 tomato (finely chopped)
4 Green Chillies
4 Red Chillies
1 tsp ginger-garlic paste
 Cloves + Cardamom + Cinnamon - 5 g each
Curd / Plain yogurt - 20 g
Cashew Nut Paste (Add some water & soak nuts & grind to make paste)
Turmeric Powder - 1/2 tsp
Cumin Seeds - 1/2 tsp
Some Coriander leaves
Salt to taste



1. Mix Red & Green Chillies, Ginger Garlic Paste, Cloves, Cardamom, Cinnamon, Curd, Cashew Nut Paste, Turmeric Powder and Coriander leaves and grind to make a paste.

2. Heat 75 ml oil in a pan. Fry Onions till golden brown.

3. Add tomato and fry for 5 mins.

4. As the oil starts to separate add the ground paste and sauté for 5 mins.

5. Add the meat and fry for 5 mins.

6. Add salt, cover and let it cook till very little gravy remains.

7. In another pan, heat remaining oil. When warm add cumin seeds. 

8. Drain water from rice and add into the pan. Fry for 5 mins.

8. Add water and salt and cook till half done.

9. In a third vessel, first add the cooked meat. Then add a layer of rice on the top. You can sprinkle some saffron for that wonderful aroma. Cover and cook till done.

  1. I love spicy food. I did an Indian cooking class last year , which I pretty sure was highly modified for Australian tastes. I'll give this try omitting the nuts. Thanks for sharing !
